Preheat oven to 425 degrees. Peel the potatoes. Cut them into 1/2 inch slices and set aside. Toss the sweet potatoes, olive oil, pepper and nutmeg in a bowl. Transfer to a jelly roll or sheet pan and bake at 425 degrees for 30 minutes, then at 300 degrees for 10 minutes until cooked through.
